Short answer

Instagram keeps the posts you liked in the Likes section of Your Activity, and unliking happens through those native controls. What the app never shows is when you liked something, so cleanup by year is not possible there. The extension scans that Likes list and lets you review items before an unlike attempt. Because Instagram exposes no reliable liked-at date, undated likes stay out of dated cleanup rather than being guessed at.
